About

Rachel is responsible for teaching the brewing practicals in the ICBD pilot brewery.  The brewing process if followed through from grain milling on to filtration and packaging with the students.  Rachel is also responsible for teaching sensory practicals, introducing the students to beer sensory protocols and techniques.

A member of the Institute of Brewing & Distilling since 2002.

Biography

Following Rachel’s graduation from the MSc Brewing & Distilling at Heriot Watt University in 2002 she joined Scottish & Newcastle at their technical centre in Edinburgh as a graduate trainee.  Over the next five years Rachel moved through several roles gaining experience in pilot brewing, chemistry, microbiology and sensory assessment at a number of production sites.  Following the acquisition of S&N by Heineken, Rachel relocated to Edinburgh as UK Sensory Manager for Heineken UK.  Responsible for the training and maintenance of the expert beer and cider panels and reporting of data globally at the head office; her role saw her oversee and audit the site sensory panels at over thirty owned and contracted production sites.

 

In 2012 Rachel moved to the Innis & Gunn Brewing Company as Quality Manager gaining experience in novel brewing techniques and barrel aging of beer, alongside establishing the company’s sensory protocols and panel.

 

In 2017 Rachel joined the ICBD team at Heriot Watt as Assistant Professor – Brewing.
