'Win' and tonic on the menu for Heriot-Watt distillery

Heriot-Watt’s contribution to Scotland’s booming gin market has been recognised with a prestigious award.

The Gin Cooperative has named the University’s International Centre for Brewing and Distilling (ICBD) as this year’s winner of its Outstanding Contribution to Scottish Gin Award for its positive and tangible impact on the drinks’ sector.

This recognition is a testament to the hard work, dedication, and passion of our team both staff and students, past and present at The International Centre for Brewing and Distilling, and the relationships that we have built with distillers locally, nationally, and internationally.

Matthew Pauley is Assistant Professor of Distilling at the ICBD. He said: “We are delighted to receive this prestigious award from The Gin Cooperative.

“This recognition is a testament to the hard work, dedication, and passion of our team both staff and students, past and present at The International Centre for Brewing and Distilling, and the relationships that we have built with distillers locally, nationally, and internationally.

The Gin Cooperative was established in 2017 with the aims of showcasing Scottish gin and raising its profile.

The ICBD is one of the leading centres for technical excellence in distilling education.

Along with teaching the distillers and brewers of tomorrow the art and science behind brewing and distilling, the ICBD is also used by academics and industry and has been a vital part of various research projects to further the understanding of nearly every element involved in the creation of alcoholic and distilled liquids. This includes studies of different cereals, yeasts, fermentations, examining the molecular make-up and commercial applications along with studies on sustainability, the flavour compounds of botanicals and more.

The research produced from the ICBD plays a crucial role in the world of Scottish Gin, and wider global spirits sectors, influencing both the academic sectors and commercial applications.
